A sauce that is a great base to build on. Mix in your favourite herbs, spices, and flavouring to make it into whatever cheesy creation you are craving.

YIELD: 1.5 cups
- 1/2 block The Very Good Cheese Co.
- 2 tbsp olive oil
- 1 cup unsweetened plant-based milk
- salt and pepper
- In a small pot over medium heat, add milk and The Very Good Cheese Co., olive oil, salt and pepper.
- Stir and heat until smooth and thick, about 4 minutes.
- Taste and adjust seasoning as desired.
If a thicker cheese sauce is desired, combine 1 tbsp cornstarch, arrowroot flour, or brown rice flour into plant-based milk before heating. Then allow to simmer with other ingredients for 4-6 minutes.
